Mango Avocado Salsa

Mango salsa is a refreshing break from the usual with pops of fresh fruit, creamy avocado, and tangy lime. And its so easy, it can be ready in 15 minutes!

Ingredients

  • 3 ripe mangos, peeled and diced (approximately 3 cups)
  • 1/4 cup finely chopped red onion
  • 1 red pepper, seeds removed and diced (approximately 1 cup)
  • 1 jalapeño, seeds removed and finely chopped
  • 1/4 cup chopped cilantro
  • 1/4 cup fresh lime juice
  • 1 large avocado, pit removed and diced
  • 1/2 tsp. salt

Instructions

  • When chopping, red pepper and avocado should be diced into 1/4" pieces while onion and jalapeño pieces should be half that size or smaller.
  • Combine mango, onion, red pepper, jalapeño, cilantro, and lime juice in a medium sized bowl and stir with a spoon.
  • Gently fold in avocado.*
  • Season with salt and stir gently to mix in and evenly distribute. Serve with chips.

Notes

* If making the day before serving, combine all ingredients except avocado and store in a sealed container in the refrigerator. Add avocado right before serving and stir to combine.
