Juicy Peach Caprese Salad with Burrata (10 Minutes)
This juicy peach caprese salad is topped with creamy burrata, fresh basil and tangy balsamic glaze. It's the perfect easy side dish for summer that can be prepped and on the table in just 10 minutes!
Drizzle olive oil and balsamic glaze across the salad in a zig-zag pattern.
Sprinkle with salt and pepper and serve.

Measurements are flexible and you can adjust the salt level and amount of pepper and balsamic vinegar you use to your prerence. I rarely actually measure and just eyeball it!To make your own balsamic glaze heat 1/2 cup balsamic vinegar and 3 Tablespoons of sugar (coconut sugar, brown or white sugar) in a small rimmed pan over medium heat, whisking to dissolve sugar. Bring to a simmer then reduce heat to low and let simmer, stirring occasionally until reduced by about half (about 10 mins). Remove from stovetop and let cool for 2-3 minutes then drizzle on salad.To make ahead of time, up to 2 hours in advance, arrange the peach slices and basil and then cover tightly and either let sit in the counter or you can refrigerate if you want. When you're ready to serve, place the burrata on top, drizzle with oil and vinegar, sprinkle with salt and pepper and serve!Store leftovers in the fridge for up to 2 days. It won't be as good as fresh but will still be tasty.
